Sorry for such a delayed update. I am preparing for those dreaded finals! By Thursday, I will be free…for a month. I return to school (online courses) for the summer.. I’ll do anything for that graduation date to hurry along!
Sadly, school and work have consumed my life, and no baking has really taken place. Aside from a surprise batch of cookies, I havent been my normal baking self. :( I did get to try a chocolate cake made in a coffee mug. Sooooooo good for when you want a quick chocolate fix! I put a scoop of ice cream on mine. Unfortunately, I do not have any pictures.. it was too good to wait!
All purpose flour- 5 Tbsp
Granulated sugar- 5 Tbsp
Cocoa- 2 Tbsp
Salt- a pinch
Baking powder- 1/4 to 1/2 tsp
Egg- 1 large
Milk- 4 Tbsp
Vegetable oil- 4 Tbsp
Pure vanilla extract- a dash
2 microwave-safe coffee mugs
1. Mix all the dry ingredients in a coffee mug to make the cake.
2. Beat the eggs slightly in a small mixing bowl and add the rest of the wet ingredients and mix well with a fork.
3. Add in the dry mixture and mix well.
4. Pour out half of the batter into each coffee mug.
5. Microwave the coffee mugs,one at a time, half- filled with the batter, on high, for a minute. If it does not get done in a minute, keep for another 20-30 seconds. Do not overcook, you might end up with a dry cake. (I kept it for 1 minute and 20seconds)
6. Let it cool and dig in.
7. It will be wonderful if you can top with vanilla ice cream
I started to run. Yeah, it didn’t last very long, but I did start. I ran in Piedmont Park after classes, and it was great. I bitched the whole way, but afterwards, I felt extremely satisfied. I hope to continue with it when school isn’t beating me over the head with textbooks.
There is a shop in a little strip mall on the corner of Hemphill and 10th. There is a chinese place, a sub place, a pizza place, and a donut place. It seems like a neglected little strip mall, but I’m well informed that drunk and hungry Techies love it at 4am. Anyways, the donut place looked like nothing spectacular. It had a sign that read “DONUTS”, so I didn’t expect anything special.After hearing that the place was pretty good, I decided I wanted to try it. Upon stepping inside, I learned that it was actually named Sublime Donuts. I walked in, and the shop looked cute, but nothing to knock my pants off. I told told the [young, handsome] cashier that I’d like a “Strawberries ‘n’ Cream”, and he told me it would be a few minutes. I thought it was odd, because usually donuts are already waiting to be devoured. There weren’t many donuts on the racks either. Once he brought my donut out to me, I was pleasntly surprised. It was so fresh. I was happy to learn that they didnt use some gross custard as the cream, as I am not a fan of gross custard. It was a cream cheese filling. Ohhhhhhhhh!!!!!!!!! The sliced a non-holed donut, and filled it with cream and fresh strawberries. Hot damn, I was in heaven. I’m not usually a donut person, but oh baby, I will be back. I have decided that after every finals, I will reward myself with a donut. Its that damn good. While eating my donut, I walked around, noticing that all the awards and pictures on the wall were about the guy selling the damn donuts. He created this place and was well acclaimed for his heavenly pieces of fried dough. Its awesome to see someone create something so awesome and be involved in each aspect of it. It made me love the place even more!

My madre is out of town. She is in the motherland (AKA: Trinidad). Today is my Grandpa’s birthday! : ) She also went for my Aunty Kamla Persad-Bissessar’s birthday celebration. She is having a wonderful time. I’m very jealous. : )
Summer is so close. That means beach, sleep, pools, Caribana, and WEDDING! Exciting stuff!

Hope everyone is enjoying Atlanta’s rainy weather. It has been a very wet and cold couple of days, but I hope it clears up for the weekend!
Truett’s is a main part of my diet. I have been eating it for years to maintain my figure (HA) and I love it dearly. Today I met a friend for lunch, and decided to try something new — A Chicken Melt. I saw my other friend try it earlier this week, and it looked sooo good. Cheese, onions and chicken, all on toasted bread. YUM! I decided against chargrilled chicken, and opted for FRIED chicken. May of not been the healthiest choice, but it sure was tasty! I loved every bite of it. After being home, I craved one again! We had some baked chicken in the fridge, so I gave it a go. Delicious. One of the best things I’ve ever had. I encourage everyone and their mom to try this!
1/2 cup of Shredded Chicken
1-2 Slices of Cheese (I used provolone)
Sliced bread (Honey Wheat!!)
2 Tablespoons of Diced Onion
Put a teaspoon of butter into a skillet and add onions. Cook your onions till slight color and remove from pan.
Slather delicious butter onto one side of each piece of bread. Put your first slice of bread butter-side down into a skillet on medium heat. Add slice of cheese, onions, and chicken. Add another slice of cheese, if you desire. Top with other slice of bread, butter-side up! FLIP! Make sure you give enough time to get a golden brown color on your bread with a good crunch.
